- Buy it in peak season, from March through July, ideally a day before you want to use it.
- Buy it ripe and sweet: more yellow than green in color, with a mild pineapple aroma at the base.
- Look for a surface that is firm and gently yielding to the touch and single-tuft crowns that are not less than four inches (no more than twice the length of the fruit itself).
- Avoid pineapples with these marks of deterioration: a wrinkled skin, gumminess or softness, fermented aroma, leakage, mold, cracks, or brown, withered leaves.
